Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking pan.
In a mixing bowl, blend together 1 cup flour, softened butter, 1/4 cup sugar, and salt until crumbly. Press mixture into the bottom of the prepared pan.
Bake for 10 minutes, then remove from the oven and let it cool slightly.
In another bowl, whisk together eggs, 1 cup sugar, sour cream, 1/4 cup flour, and vanilla extract until smooth.
Pour the cream mixture over the baked crust and arrange peach slices on top.
Return to the oven and bake for an additional 30-35 minutes, or until the filling is set.
Allow to cool before cutting into bars. Serve and enjoy!
