Preheat oven to 375°F and line a baking sheet with parchment paper.
In a bowl, combine peaches, granulated sugar, brown sugar, cinnamon, cornstarch, and lemon juice. Mix well.
Roll out the pie crusts and cut into circles using a cookie cutter.
Spoon a small amount of peach mixture onto the center of each circle.
Fold the dough over to form a half-moon shape and press edges to seal with a fork.
Brush with egg wash and sprinkle with granulated sugar.
Bake for 18-20 minutes or until golden brown.
Allow to cool slightly before serving.
