Ingredients

  • 2 cups diced fresh peaches
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1 tbsp cornstarch
  • 2 tsp lemon juice
  • 1 package refrigerated pie crusts
  • 1 egg (beaten for egg wash)
  • Granulated sugar (for sprinkling)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a bowl, combine peaches, granulated sugar, brown sugar, cinnamon, cornstarch, and lemon juice. Mix well.
  3. Roll out the pie crusts and cut into circles using a cookie cutter.
  4. Spoon a small amount of peach mixture onto the center of each circle.
  5. Fold the dough over to form a half-moon shape and press edges to seal with a fork.
  6. Brush with egg wash and sprinkle with granulated sugar.
  7. Bake for 18-20 minutes or until golden brown.
  8. Allow to cool slightly before serving.
