Ingredients

For the Cake

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed bananas (about 2 large bananas)
  • 1/2 cup buttermilk
  • 1 cup chopped pecans

For the Caramel Frosting

  • 1/2 cup unsalted butter
  • 1 cup light brown sugar, packed
  • 1/4 cup whole milk
  • 2 cups powdered sugar, sifted

Instructions

Prepare the Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract and mashed bananas.
  5. Gradually mix in the flour mixture, alternating with the buttermilk, until well combined.
  6. Fold in the chopped pecans and pour the batter into the prepared pan.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan.

Make the Caramel Frosting

  1. In a medium saucepan, melt the butter over medium heat.
  2. Stir in the brown sugar and milk, bringing the mixture to a boil. Remove from heat and let cool slightly.
  3. Gradually whisk in the powdered sugar until smooth.
  4. Spread the caramel frosting over the cooled cake. Let it set before serving.
