Ingredients

  • 1.5 lbs flank steak, butterflied and pounded thin
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup pine nuts (optional)
  • 4 cups marinara sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix breadcrumbs, Parmesan cheese, garlic, parsley, and pine nuts (if using).
  3. Lay the steak flat and season both sides with salt and pepper.
  4. Spread the breadcrumb mixture evenly over the steak.
  5. Roll the steak tightly into a log and secure with kitchen twine.
  6. Heat olive oil in a large skillet over medium heat and sear the beef roll on all sides.
  7. Transfer the seared roll to a baking dish and pour marinara sauce over it.
  8. Cover the dish with foil and bake for 45 minutes.
  9. Remove foil and bake for an additional 15 minutes.
  10. Let rest for 10 minutes before slicing and serving.
