Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.
Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove from pan and set aside.
Add remaining oil, garlic, and vegetables to the pan. Cook for 3-5 minutes until tender-crisp.
In a small bowl, whisk together honey, soy sauce, and cornstarch mixture.
Return chicken to the pan, pour sauce over the top, and toss to coat.
Simmer for 2-3 minutes until sauce has thickened. Serve over rice.
