Preheat the oven to 375°F (190°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
Add the diced onion and garlic to the skillet, cooking until softened.
Stir in the cream of mushroom soup and diced tomatoes. Season with salt and pepper.
Combine the cooked noodles with the beef mixture and transfer to a greased 9x13-inch baking dish.
Sprinkle shredded cheddar cheese evenly on top.
Bake for 20-25 minutes or until the cheese is melted and bubbly.
