In a bowl, whisk together coconut aminos, honey, garlic, ginger, sesame oil, rice vinegar, and Chinese five-spice powder.
Place the beef short ribs in your Instant Pot or slow cooker and pour the sauce over them.
If using an Instant Pot, cook on high pressure for 45 minutes, followed by a natural release. For a slow cooker, cook on low for 6-8 hours.
Once cooked, remove the ribs and set aside. Optionally, simmer the sauce to thicken.
Serve the ribs topped with sliced green onions and sesame seeds.
