In a large bowl, dissolve yeast in warm water. Add olive oil, salt, and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise until doubled, about 1 hour.
Preheat oven to 500°F. Punch down dough and press evenly onto the bottom and halfway up the sides of a greased 13x9-in. baking dish. Layer cheese over dough.
Combine crushed tomatoes, olive oil, oregano, sugar, garlic powder, pepper, and red pepper flakes in a bowl. Spoon sauce over the cheese in 3 lengthwise rows.
Bake on the lowest oven rack until crust is golden brown and cheese is bubbly, about 15 minutes. Let cool for 5 minutes before serving.
