Preheat your oven to 350°F (175°C).
In a large skillet, cook the chopped bacon over medium heat until crisp. Remove the bacon and set aside, leaving the grease in the skillet. Add the diced onion and sauté until translucent, about 3-4 minutes.
In a large mixing bowl, combine the pork and beans, barbecue sauce, brown sugar, apple cider vinegar, yellow mustard, and smoked paprika. Stir in the sautéed onions and half of the cooked bacon.
Transfer the mixture to a large baking dish. Sprinkle the remaining bacon on top. Bake uncovered in the preheated oven for 1 hour and 20 minutes, or until the beans are bubbly and the sauce has thickened.
Remove from the oven and let cool slightly before serving. Enjoy as a side dish or a hearty addition to your meal.
