Rinse and pat dry the chicken. Rub olive oil all over the chicken.
Sprinkle garlic powder, onion powder, thyme, salt, and pepper over the chicken.
Place the onion quarters inside the chicken cavity.
In a slow cooker, add carrots and potatoes as the base layer.
Place the chicken on top of the vegetables.
Cover and cook on low for 6-7 hours or until the chicken reaches an internal temperature of 165°F.
Carefully remove the chicken and vegetables. Serve warm.
