Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 2 cups chicken broth
  • 1 (15 oz) can diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado

Instructions

  1. Place chicken breasts at the bottom of a slow cooker.
  2. Add rice, black beans, corn, chicken broth, diced tomatoes, onion, garlic, and seasonings on top.
  3. Stir gently to combine, ensuring rice is submerged in liquid.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and rice is tender.
  5. Remove chicken, shred it with two forks, then return to the slow cooker and mix well.
  6. Serve in bowls with your favorite toppings.
