Ingredients

  • 1 tablespoon olive oil
  • 4 sausage links, sliced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups chopped kale
  • Salt and pepper to taste
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced sausages and cook until browned. Remove and set aside.
  3. In the same pot, sauté onion until translucent, then add garlic and cook for 1 minute.
  4. Pour in chicken broth and bring to a simmer.
  5. Stir in white beans, kale, smoked paprika, salt, and pepper.
  6. Return the sausages to the pot and let everything cook together for 10 minutes.
  7. Serve hot and enjoy!
