Ingredients

  • 1 ½ cups pecan halves
  • ½ cup almond flour
  • ¼ cup coconut flour
  • 1/3 cup powdered erythritol
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 3 large eggs
  • ¾ cup sugar-free maple syrup
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, coconut flour, and powdered erythritol for the crust.
  3. Add melted butter and vanilla extract to form a dough. Press it into a pie pan.
  4. Bake the crust for 10 minutes and set aside.
  5. In another bowl, whisk eggs, sugar-free maple syrup, and a pinch of salt.
  6. Fold in pecan halves and pour the filling into the crust.
  7. Bake for 40-45 minutes until the filling is set.
  8. Let cool before serving.
