Ingredients

For the Cake

  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk

For the Lemon Mousse

  • 1 cup heavy whipping cream
  • 1 cup lemon curd
  • 1 tbsp powdered sugar

  • Fresh lemon slices
  • Whipped cream

Instructions

For the Cake

  1. Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla extract.
  4. Gradually add dry ingredients to wet ingredients, alternating with milk. Mix until smooth.
  5. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool completely before assembling.

For the Lemon Mousse

  1. Whip heavy cream with powdered sugar until stiff peaks form.
  2. Fold in the lemon curd gently to maintain the airy texture.

  1. Spread the lemon mousse evenly over the cooled cake.
