Ingredients

  • 1 pound ground chicken
  • 1/2 cup almond flour
  • 1 large egg
  • 1/2 cup buffalo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter, melted
  • Optional: Ranch dressing or blue cheese dressing for serving

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, almond flour, egg, garlic powder, onion powder, salt, and pepper.
  3. Roll the mixture into 1-inch meatballs and place them on the baking sheet.
  4. Bake for 15 minutes or until fully cooked.
  5. Meanwhile, mix melted butter and buffalo sauce in a small bowl.
  6. Once meatballs are done, toss them in the buffalo sauce mixture to coat evenly.
  7. Serve warm with ranch or blue cheese dressing, if desired.
