Ingredients

  • 2 tbsp olive oil
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 lb andouille sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 lb shrimp, peeled and deveined
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and sausage, cooking until browned.
  2. Add onion, bell pepper, and garlic. Sauté until vegetables are tender.
  3. Stir in chicken broth, rice, diced tomatoes, and Cajun seasoning. Bring to a boil, then reduce to a simmer and cover.
  4. Cook for 20 minutes, or until rice is tender.
  5. Add shrimp, stirring until pink and cooked through, about 5 minutes.
  6. Season with salt and pepper to taste. Garnish with green onions before serving.
