Rub the chicken breasts with olive oil, thyme, garlic powder, onion powder, salt, and pepper.
Bake the chicken on a lined baking sheet for 20-25 minutes or until fully cooked.
Meanwhile, bring the chicken broth to a boil in a medium saucepan. Remove from heat and stir in couscous. Cover and let sit for 5 minutes.
Fluff the couscous with a fork and mix in cherry tomatoes and parsley.
Slice the cooked chicken and serve over the couscous or divide into meal prep containers.
