Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup whole wheat couscous
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 2 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rub the chicken breasts with olive oil, thyme, garlic powder, onion powder, salt, and pepper.
  3. Bake the chicken on a lined baking sheet for 20-25 minutes or until fully cooked.
  4. Meanwhile, bring the chicken broth to a boil in a medium saucepan. Remove from heat and stir in couscous. Cover and let sit for 5 minutes.
  5. Fluff the couscous with a fork and mix in cherry tomatoes and parsley.
  6. Slice the cooked chicken and serve over the couscous or divide into meal prep containers.
