Ingredients

  • 1 beef tenderloin roast (4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons minced garlic
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture evenly over the beef tenderloin.
  4. Place the tenderloin on a rack in a shallow roasting pan.
  5. Roast in the preheated oven until a thermometer reads 135°F (57°C) for medium-rare or 145°F (63°C) for medium, about 45-60 minutes.
  6. Let the beef rest for 10 minutes before slicing and serving.
