Ingredients

  • 1 lb ground beef
  • 3 medium potatoes, peeled and diced
  • 2 medium carrots, sliced
  • 1 medium onion, chopped
  • 2 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat vegetable oil over medium heat.
  2. Add ground beef and cook until browned, breaking it into crumbles. Remove and set aside.
  3. In the same pot, sauté onions and carrots until softened, about 5 minutes.
  4. Return the beef to the pot, add potatoes, diced tomatoes, and beef broth.
  5. Season with garlic powder, paprika, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally, until potatoes are tender.
  7. Serve warm with crusty bread or crackers.
