Heat sesame oil in a large skillet over medium heat.
Add ground beef and cook until browned, breaking it apart as it cooks.
Stir in garlic, ginger, and soy sauce, cooking for another 2 minutes.
Add coleslaw mix to the skillet, stirring well to combine. Cook until softened, about 5 minutes.
Season with salt and pepper to taste.
Garnish with chopped green onions before serving.
