In a skillet, brown the ground beef over medium heat and drain any excess fat.
Add the taco seasoning and diced tomatoes with green chilies to the beef. Stir well.
In the Crock Pot, layer half of the frozen diced potatoes.
Top with the beef mixture, spreading evenly.
Add the remaining potatoes on top and sprinkle with cheese.
Cover and cook on low for 6 hours or on high for 3 hours.
Serve with sour cream, if desired, and enjoy!
