Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup red seedless grapes, halved
  • 1 cup crisp apples, diced
  • 1/2 cup celery, thinly sliced
  • 1/2 cup walnuts, chopped
  • 1/3 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Dice the cooked chicken, halve the grapes, and dice the apples.
  2. Thinly slice the celery and chop the walnuts.
  3. In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, salt, and pepper until smooth.
  4. In a large mixing bowl, combine the chicken, grapes, apples, celery, and walnuts.
  5. Pour the dressing over the salad ingredients and toss until evenly coated.
  6. Chill the salad for 10-15 minutes if desired. Serve on its own, over lettuce, or with a slice of crusty bread.
